Whole Brinjal Fry - No Onion No Garlic

My today's recipe sounds almost like Bharwan baingan, the famous stuffed eggplant curry. But my version is definitely an easiest one, you can prepare this whole brinjal fry within few minutes, no grinding, no chopping and no sauting for hours. Just a simple spice mix makes these incredible looking brinjal fry. Actually this recipe goes for just three ingredients eventhough oil and salt is used in this fry. These whole brinjal fry is going to be a part of this week's blogging marathon and the theme is Just 3 ingrdients, as per rule Sugar, salt and oil are not considered as one among the three ingredients we can use.So this whole brinjal fry suits prefect for the theme.

If you have tiny brinjals, this fry will definitely makes an excellent side dish to serve along with roti, rice and dal. A prefect dish to make if you are in hurry, you can pack this fry very well in a lunch box. This quick and simple brinjal fry is really very easy to make. Give a try, if you want to dish out something different from the usual one. Even a kid with the help of an adult can make this fry and its a bachelor's friendly recipe too.

 Whole Brinjal fry

10 Tiny brinjals
1tbsp Chilly powder
1/2cup Coarsely grounded peanut powder
Salt
Oil

Mix the chilly powder, coarse peanut powder,salt in a bowl.

Take the brinjal, slit open it as four from the bottom and keep the head intact.

Now stuff the spice mixture inside the slits gently, keep aside.

Heat enough oil in a pan, drop the stuffed brinjals and fry in simmer until they get well cooked.

Serve warm as side dish.

I add peanuts in almost everything but have never tried it with brinjal! Will remedy that now looking at this beautifully cooked one!
