Usually prepared with country side vegetables, Chettinad masala kuzhambu can be prepared very well simply with Shallots aka small pearl onions. This fingerlicking no tamarind kuzhambu goes for an easy and quick cooking process. The basic ingredient for this gravy is a coconut based grounded masala. Most of the chettinad gravies calls for grounded spiced coconut paste and that is the best part of their cuisine. My today's post is also prepared with masala paste which calls for freshly grated coconut, cashew nuts, fennel seeds and dry red chillies with sauteed onions and tomatoes. This paste brings wonderful taste, spiciness and definitely the thickness to this simple gravy.

General Tso's Tofu/Vegan Tofu Kangjung
Few of my bookmarked recipes are still sitting sadly to give a try at home. Obviously am trying to clear them one by one. I have been planning for the popular General Tso's chicken for a while, but somehow i couldnt able to dish out. But thank god, i tried my hands with Soya paneer aka Tofu recently. Oh my god, what a easy breezy dish to make at home. I simply loved the mix of sweetness, spiciness and sourness in this dish. This dish makes an excellent side dish to serve along with cooked rice or simply sauteed noodles.

Mushroom, Flat Beans Fried Rice
Weather is too hot here, obviously am trying to cook earlier in weekends as well as in weekdays. Since we are crossing the highest level of hot temperature for the past three days, obviously we are sticking to drinking more water and eating salads than having some solid foods. However if you have some hungry tummies around you to feed especially for weekday lunches, you have to stick with some easy breezy dishes to dish and serve them quickly. My today's dish is one among those easy breezy but yet a filling and healthy dish to serve with simple side dishes.

Vegan Raspberry Almond Milk Popsicle
Vegan Raspberry Almond milk popsicle is a prefect summer treat to relish with your near ones with less efforts. My today's post is again a simple popsicles prepared with almond milk and frozen raspberries. Blend everything together with enough sugar and pour the mixture in popsicle mould, freeze it and your popsicles are ready to relish. How simple na, i prepared this popsicle as a vegan version. I used almond milk but trust me rice milk, coconut milk works awesome as well. Not to forget that even any sort of berries works prefect to make this excellent frozen desserts aka this popsicles.
Vegan Cherry Popsicles
We are getting some super sweet cherries in our farmer's market since few days. Cherries are my favourite fruits. Obviously i grabbed a kg of this cherries and back home, after munching some, i couldnt resist to prepare a simple cherry popsicles to fix the theme of this week's blogging marathon. My theme of this week's marathon is Kid's friendly-frozen foods. After a lipsmacking mango sorbet, my today's post is again an another easy summer treat.

Mango Sorbet with Smarties
Its getting too hot here in Paris. Though its not officially Summer here, weather is not far from the usual summer temperature. Nothing can beat some homemade refreshing icecreams or sorbets to relish while the weather is hot outside. My today's post is a simple sorbet prepared with fresh mango chunks and mini smarties. Definitely a kid's friendly frozen food to relish without any fuss. I just love the popular 'Gems' those chocolate toffees are my all time favourite, but i dont miss them here as we have smarties here. Smarties replace Gems very well.

Vegan Rice Pudding
Rice pudding, this sweet dish is my daughter's favourite, she loves it very much. Whenever i feel like dishing out simple pudding, i will surely prepare rice pudding. And my today's recipe is a fantastic pudding which calls for easy ingredients. A can of coconut milk or freshly squeezed coconut milk, sugar and rice, these three ingredients is much needed to prepare this easy breezy vegan sweet. I simply flavoured this pudding with vanilla extract. If you want to make a rice pudding with an exotic touch, add some mango chunks or pineapple chunks depending upon your tastebuds. However my today's post is a simple and an elegant dessert to serve after a meal.

I have been looking for an easy breezy desserts or sweets especially for the theme of this week's blogging marathon. Yes my theme for this week's blogging marathon is 'Vegan Sweets'. Though i had few vegan sweets in my mind, accidentally i crossed this bread kaja in Instagram. And this recipe is from Blend with Spices, Hari Chandana shared this recipe's click in Instagram and immediately i fell in love with this incredible bread kaja. Obviously i immediately went through the recipe, and that this sweet is completely vegan. How can i resist to this incredible sweet, my sweet tooth was actually craving for something crispy and sweet, without any hesitation i gathered all the ingredients immediately and prepared this kaja to served as dessert after our sunday meal.

Coconut burfi, this is my all time favourite sweets and nothing can beat the taste of this simple sweets. Whenever my sweet tooth crave for some sweets, i dont hesitate a second to dish this incredible burfi. If you check my blog, you may notice that i have already tried couple of versions of Coconut burfis. My love for this sweets pulled me to dish out some impossible versions of coconut burfis and my today's post is one among those unimaginable version. Actually my today's recipe is completely vegan and gluten free. Trust me this incredible sweet will definitely please anyone's tastebuds as this sweet is completely quick and easy to dish out.

Venezuelan Chicha/Venezuelan Rice Milk/Chicha Venezolana
Venezuelan Chicha, is a popular drink sold by the vendors at street corners, markets, fairs and outlets in commercial centres, malls etc in Venezuela. "Chicha" is made of boiled rice, milk and sugar and served cold with loads of ice cubes. Usually served as a refreshing beverage, cinnamon powder, condensed milk or chocolate are also used as toppings. This Venezuelan "Chicha" contains no alcohol as it is not fermented. A lot of Latin American countries have a "chicha" recipe but they are all very different. The Venezuelan Chicha is basically the liquid version of the famous dessert “arroz con leche”, another Latin American staple dessert.

Buñuelos Mexicanos/Mexican Buñuelos
Buñuelos Mexicanos is a popular fritters prepared during Christmas and New year's day. Though Bunuelos do exists as round balls, this flat shaped fritters are a sort of street foods in Mexico served along with hot atole and tamales to keep warm during their festive shopping. These Buñuelos are light, crispy and round disc once deepfried are sprinkled with cinnamon-sugar or else served with piloncillo syrup. Atol de Elote/El Salvadorian Corn Beverage
Atol de Elote is a popular El Salvadorian beverage, which is prepared with fresh corn kernels, milk, cinnamon and sugar. Traditionally white corn is used in El Salvador to make this delicious beverage, though yellow corn kernels can be used as well. Fresh corn kernels brings a wonderful fresh flavor to this beverage though frozen corn kernels makes excellent Atol de Elote too. Do you know Atoles are very popular beverages in Central America with roots in Mayan Cuisine. And this Atol de Elote is definitely a sort of thick drink often eaten in spoons. And traditionally this drink is served in a bowl made out of a dried calabash gourd.
