Zucchini, Carrot & Tofu Paratha

Have you ever prepared paratha with tofu, if not you should give a try them. Tofu gives a fabulous softness to the paratha and its stays prefectly soft even to pack in a kid's lunch box. I have been cooking with tofu since a long. Earlier i was bit skeptical to use this soya cheese as its was quite an unknown ingredient for me. However i have learned myself to cook with this incredible tofu and now its quite our favourite cheese which i never fail to cook with. I can easily get this soya cheese as am living in China town. Obviously tofu have its own place in my weekly cooking. Tofu exists in three varieties, silken tofu is used often in vegan desserts, firm tofu and extra firm tofu for making dishes out of it.

Tofu Chow Mein/Vegan Chow Mein

Chow mein, is a stir fried noodles and this dish very popular in Chinese restaurant menus. Not only in chinese restaurants, this dish is seriously popular in many countries like Nepal, India and United states etc. Chow means fried and Mein means Noodles, hence the main ingredient for making this dish is noodles. This stir fried noodles can be prepared with many variations.In American chinese cuisine, chicken is the most common meat though sometimes pork,beef ,shrimp or tofu can be substitued. However vegetarian and vegan chow mein do exists. Do you know Chow mein do exists as two types, yes one is steamed chow mein and crispy chow mein whick is also known as Hong Kong style chow mein.

Gluten free Mini Tofu Fingers/Fried Tofu Fingers

Am trying to inculde tofu quite often in our meal, kids love it as much as like paneer. Actually tofu is replacing very much paneer in my cooking. One of my recent trial with tofu is this simple and very easy fried fingers. Yes you can make some fantastic starter with extra firm tofu. Simply flavoured with any sort of spices, tofu can be cooked as many delicious dishes. However we are great fan of this fried tofu fingers. Since tofu doesnt have any flavor, if you are making this ultimate Vegan and gluten free tofu fingers dont ever hesitate a second to flavor them with your favourite spices. Actually i went with simple garam masala flavoured tofu fingers as we love masala flavor in tofu.

Few of my bookmarked recipes are still sitting sadly to give a try at home. Obviously am trying to clear them one by one. I have been planning for the popular General Tso's chicken for a while, but somehow i couldnt able to dish out. But thank god, i tried my hands with Soya paneer aka Tofu recently. Oh my god, what a easy breezy dish to make at home. I simply loved the mix of sweetness, spiciness and sourness in this dish. This dish makes an excellent side dish to serve along with cooked rice or simply sauteed noodles.

Cumin Flavored Tofu Paratha/Tofu Paratha with Cumin seeds

After paneer, i couldnt resist to prepare some healthy parathas with silken tofu which is simply flavoured with slightly crushed roasted cumin seeds. Cumin seeds gives a pleasant flavor to this healthy and super soft paratha. If you are planning to add tofu in your dishes, just give a try to this fantastic paratha. Though silken tofu is usually used in many desserts, they suits absolutely prefect for making parathas too. Silken tofu grinded as fine paste works awesome for making parathas. It helps a lot to give the softness while making parathas. Trust me kids will definitely enjoy this healthy, protein rich parathas very well with any side dish.

Tofu Tomato Clear Soup

Soup plays an important role in our daily menu, honestly i can have my bowl of soup at anytime of the day. Yep am a sucker of warm soup, earlier am a person who dislikes the word 'soup', now am just opposite to it. Coz of the chilled evening weather here, i dont have any mood to cook our dinner obviously my mind goes towards the soup, which are quite easier for me than rolling a roti and finding a side dish to it. Coming to this clear soup, i just throwed some chopped tomatoes,chopped tofu cubes in a vegetable broth which i spiced up with green chillies and pepper powder, voila your soup is ready,this is enough to make this incredible warm bowl of clear soup.

An easy breezy soup, gets ready just within few minutes, the cooking time takes hardly less than 15minutes and the soup will be ready to enjoy. I love my soup with dried herbs and hence i used dried basil leaves in this soup, you can replace them very well with freshly chopped any herbs. With a simple sandwich and a bowl of  this soup is very much enough to have a satisfying dinner. If you dont like tofu, you can replace it very well with cubed potatoes, mix and match the vegetables as you desire, am sure this soup will become your favourite.

Masaledaar Tofu Bhurji

Tofu, the wonderful soya cheese is a versatile ingredient, which can be used as a replacer for eggs in bakes, in eggless desserts and also you can cook varieties of Indian style dishes. One among my favourite tofu based dish is tofu parathas, the addition of tofu makes parathas very soft and its our family favourite. Later after making a variety of foods with tofu, i prepared this nutritious,protein rich spicy masaledaar tofu bhurji with this incredible soya cheese.

Actually this dish makes an excellent side dish for rotis, also you can stuff your parathas with this incredible masala tofu bhurji. I crossed this dish from Sanjeev Kapoor's space, immediately i tried my hands with extra firm tofu sitting in my fridge.
