Simmer & Stir Christmas Cake

This year i baked an easiest version of Christmas cake with no soaking of dry fruits. Obviously easy christmas cake to give a try if you have completely forgotten about soaking dry fruits to bake your christmas cake. This christmas cake calls for an easy preparation, no need of beating the eggs for hours and the end result is definitely a must try. If you are busy with some works and you are supposed to bake something Christmassy for your table, then dont forget to check this cake. Actually while googling for an easy, dry fruits loaded christmas cake i got hooked to this ultimate cake. Needless to say that this cake tastes as much as prefect as like the traditional one though in this recipe, dryfruits are simmered and stirred to the cake batter.

I grabbed this recipe from here, though the original recipe calls for brandy i have completely skipped it and went with orange juice. However this year, i completely omitted the brandy or rum in christmas bakes. With simple ingredients, with loads of dry fruits and a mixture of spice powders, am sure this Simmer & stir christmas cake will bring the festive mood while having this fantastic cake. This cake is going to be a part of Bake-a-thon, am running thrice a week.

150grams Butter
1+1/2cup Dark muscovado sugar
2cups Mixed dry fruits & glaced cherries
2tbsp Grated orange zest
1tbsp Grated lemon zest
2cups Orange juice
3 Large egg (lightly beaten)
1/2cup Almond meal
1+1/2cups Flour
1tsp Baking powder
1/2tsp Baking soda
1tsp Cinnamon powder
1/4tsp Nutmeg powder
1/2tsp All spice powder

Put the butter, sugar, dry fruits,orange zest, lemon zest,orange juice in a large pan. Bring slowly to the boil, stir until the butter gets melted.

Remove the pan from the heat and leave to cool for 30 minutes.

Meanwhile, preheat the oven to 350F, line a round baking tin with baking paper and keep aside.

Add the eggs,almond meal into the cooled fruits-orange juice mixture and mix well.

Sift the flour, baking powder,baking soda and spices into the pan. Stir in gently, until there are no traces of flour left over.

Simmer & Stir Christmas Cake

Spoon the mixture into the tin and smooth it down evenly.

Bake for 45 minutes, until the cake is dark golden in appearance and firm to the touch.

Cover the top of the cake with foil if it starts to darken too much.

Leave the cake to cool in the tin. Slice it and enjoy.
