Mango,Semolina & Coconut Halwa /Mango Suji Sheera with Coconut

Mango, the King of fruit is our family favourite fruit and whenever i get this fruit, i dont hesitate a second to prepare some fantastic dish out of this fruit. Kesari aka Suji halwa which is well known as Semolina pudding is one among the most traditional Indian sweets which is quite often prepared for any occasion quickly as this dish asks for some easy preparation. This lipsmacking semolina pudding is one of our family favourite and my better half love this kesari aka halwa to the core. Since i want to prepare a different version of this pudding, this time i prepared mine with fresh mango puree, dessicated coconut flakes with roasted semolina. Initially i was bit skeptical to try this coconut and semolina combination, but trust me the final result was definitely a droolworthy pudding.

You may wonder why am posting this delicious halwa today, i have a reason for this, my today's post goes to this week's blogging marathon, as i picked 'Mother's day special sweets'. This mango sheera will definitely please anyone's tastebuds definitely, and the addition of dessicated coconut will definitely give a fabulous twist to this exotic flavored pudding. I used dessicated coconut flakes in this dish, though you can use freshly grated and roasted coconut flakes for making this irresistible halwa.  Also you can use store bought mango puree to dish out this halwa if its not mango season in your place.

Mango Suji Sheera with Coconut

1cup Rava
1/4cup Dessicated coconut flakes
1cup Fresh Mango pulp
1cup Water
3/4cup Sugar
Pinch Salt
1/4cup Ghee
Few Cashew pieces
1tsp Cardamom powder

Roast the rava until a nice aroma comes from, add the dessicated coconut to the rava and roast in simmer. Put off the stove.

Bring boil the mango pulp with water,salt and sugar and stir until the sugar get dissolves.

Meanwhile melt the ghee, keep the flame in simmer.

Add the roasted rava-coconut to the boiling mango water and stir it until the rava gets cooked.

And the mixture gets off from the bottom of the vessel.

Fry the cashew nuts in the hot ghee, pour the hot ghee over the cooked rava with fried cashew nuts and mix well until the ghee gets well mixed..

Serve hot.
